Guidelines to a good coffee harvest
Harvesting and post-harvest are very crucial periods to obtaining a good quality green coffee, which ends up determining the purchase price of your coffee.
The following basic guidelines must be respected:
- Harvest the ripe cherries (bright red fruits),
- Do not harvest overripe cherries, dried cherries on the tree or those downed over a long time,
- Leave immature cherries; a good harvest should not contain more than 5% green cherries,
- Make 4 or 5 tours to the farm during the peak harvest season so as to end up producing good quality coffee.
